Mata kuliah ini memberikan pengertian tentang bahan pangan yang memiliki manfaat kesehatan, terutama eksplorasi sumber daya lokal untuk diolah menjadi bahan pangan yang memiliki manfaat kesehatan akibat komponen bioaktif yang terkandung di dalamnya. Selain itu juga dibahas hubungan antara pangan, gizi dan kesehatan; khasiat komponen bioaktif dalam mencegah gangguan kesehatan, jenis pangan fungsional; prinsip-prinsip pengolahan dan analisis produk; serta teknologi pengembangan produk pangan fungsional.
